The Fleur de Sel Festival will take place at Les Portes. It will highlight the traditional know-how of the salt-marsh workers and offer an immersion into the world of salt marshes.

2:15 p.m.: “An Olfactory and Gastronomic Journey into the Heart of Salt Crystals”
with Arthur DA COSTA ADAO, Michelin-starred chef at L’Écailler (La Flotte); Louis MERLIN, President of APSIR; and Morgane DAESCHNER, agricultural consultant
4:15 p.m.: “Comparative Perspectives on Cognac—currently in the process of being listed as a UNESCO World Heritage Site—and Salt: Two Key Industries Shaping Our Regions”
with Vanessa FEREY, Director—Les Savoir-faire du Cognac, and Véronique RICHEZ-LEROUGE, Charente-Maritime Departmental Councilor and author of several books on food, certifications, and the natural world.
